Ideal as an aperitif, and appetizer, to accompany cold cuts and fresh cheeses: They go very well with craft beers and prosecco.
Within 12 hours of harvesting they are immersed in a water bath to which salt is added after a period of time that can vary between 15 and 25 days.
They are processed au naturel and no additives or dyes are used. They are ready for sale after 8 to IO months of aging in barrels. The flavor is acetic-vinous with lactic-bitter undertones, as well as hints of almond. On tasting, the olive is crisp, an important feature being that the flesh comes away cleanly from the stone.
